10 KITCHEN TIPS/TRICKS FOR THE NIGERIAN BRIDE

Hi there, just got married? Congratulations. I know that coupled with the stress of settling down to marriage, getting to know your  in laws better and juggling the 9-5 to taking good care of hubby,  you will love these tips and tricks to help you perform some wonders in the kitchen.  It helps hasten the time you spend preparing that sumptuous meal and also enhance taste,  for example when you want to reduce the saltiness in an already over salted food!  Here are the tips, enjoy.
1. Coconut rice: when making your coconut rice. No need to waste time husking the coconut then  proceed to manual grating.  You can cut the coconut fruit into tiny or smaller pieces with a knife then pour everything into your electrical blender, add a little water and blend to a smooth paste. You pour this into a bowl, add your already pre boiled hot water and allow to steep for like thirty minutes then sieve out the chaff.  Your coconut water is ready for use.

2. Moi moi: When making your moi moi, add a little stir fry of carrot, sweet corn, shrimps, onions, it gives it a great aroma and dazzles the tastebuds.

3. Eggs: When boiling your eggs, you can add a little salt to the water to prevent the eggs from cracking.  Personally I prefer the soft boiled egg.

4. Baking:  now this is for the brides that love to bake probably for consumption at home or for sale, when baking your cake instead of adding the powder preservative, you can add a little brandy to the mixture to preserve it.
Also, instead of adding cold water to the mix, you can add hot water; this makes the cake moist and succulent.
Finally, to get that really moist cake, after baking you can sprinkle your cake with sugar syrup or cherry brandy.

5. To prevent boiling over of hot liquid over the sides of the pot, place a turning stick over the pot

6. Pap: To reduce the stress of sieving the roughages out of the pap, you can grind your corn for pap  without sieving out the chaff, your pap will come out looking like oats when prepared. Its healthy as the fibre content is still in there. After all its all corn! This tip is especially useful when nursing and weaning a new born.


7. Add a little groundnut oil and sliced onions when boiling your spaghetti and rice. It prevents it from sticking together and gives it a great aroma that your neighbours can perceive for miles!

8. To prepare catfish for cooking, boil water till its warm and pour over the fish to remove the slime and fishy smell, using salt is more tedious and may not remove all the slime and alum might not be too healthy for that purpose. Do not over boil the water because when its too hot it will scald and peel off the skin.

9. When there’s too much pepper or salt in your stew or other foods just peel off 2 or 3 slices of raw yam and place inside the stew and bring the boil. The yam will absorb all the salt!

10. When you have a burnt pot, don’t despair, just add water to the pot and bring to boil for about two to three minutes , then remove it from the fire and wash off easily
Also, when making your soups like banga soup, ofe nsala and others ,if you do not want the stress of pounding yam or cocoyam to thicken the soup you can use plain flour to do so. I hope you find this tips not only helpful but that you share to family and friends. Stay blessed.
